Een zeer delicate en verfijnde gerijpte dressing, die natuurlijk witte truffelextract combineert met gekookte druivenmost (Mosto cotto) . Het gevolg is een sterk aroma en een intense smaak, deze dressing kan o.a. worden gebruikt als vervanging van geschaafde of geraspte truffel.

Perfect op b.v. risotto, verse en oude kazen, vlees, wild, kwarteleitjes.

Located on the historical hills of Matilde di Canossa in Roncolo di Quattro Castella, between Parma and Reggio Emilia, the about 130 ha winery VENTURINI BALDINI is one of the leading producers of premium organic sparkling wines and balsamic vinegars. The Acetaia di Canossa of VENTURINI BALDINI owns and manages one of the oldest and largest vinegar cellars (17th century) in the region, with more than 400 barrels made of different woods. We produce the highest quality Aceto Balsamico Tradizionale DOP di Reggio Emilia (aged a minimum of 12 years to more than 25 years). The production of this unique product, which is derived from grape must, is overseen by the Consorzio di Reggio Emilia which guarantees with its certification the authenticity of the production process. Our product range includes also high quality aged condiments and Aceto Balsamico di Modena IGP. The brand Acetaia di Canossa represents the strong link with the territory and the history of balsamic vinegar. The vice-queen of Italy, Matilde di Canossa, is the historical figure who made the Reggio area famous beyond its borders, and whose name is inextricably linked to balsamic vinegar.
